Broiled Tilapia Parmesan


Time Started: 7:10pm

Process:
-Gathering Ingredients
1/2 cup Parmesan cheese -- I used finely shredded, I'm sure you can use other kinds
1/4 butter, softened -- Melted 1/2 stick of unsalted butter in the microwave for 45 seconds
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 lbs. tilapia fillets -- I used frozen fish from Wal-Mart.
-Preheat the broiler
-In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. (It will look like a horrible science experiment but, trust me, it gets better.)
-Add to the mix the dried basil, pepper, onion powder and celery salt.
-Mix this well and set it to the side. (photo on side of page)
You will need a broiling pan lined with aluminum foil for this recipe. The foil makes clean up so much easier.

Arrange fillets in a single layer on the prepared broiling pan. You will most likely have more fish than will fit on the pan. Do two batches so that you do not ruin all the fish by trying to shove it all on one pan.
Broil the fillets a few inches (3 or 4) from the heat for 2 or 3 minutes. I leave the oven door open a little so that I can watch the fish cooking and to regulate the heat
Flip the fillets over and broil 2 more minutes.
Remove the fillets from the oven and cover the top side with the Parmesan mixture.
Broil for 2 more minutes or until the topping is browned.
Do not overcook the fish!
